Abstract. The article presents the results of a long-term work of the scientists at the Volga Region Research Institute of Manufacture and Processing of Meat and Dairy Products on the development and implementation of innovative resource-saving, environmentally friendly system technologies of livestock production, improvement of methods of its processing and creation of high-quality food with desired consumer properties.
